Tuna Melt

These days any recipe using a can of tuna is a good recipe in my books! This is so easy and quick to make, just mix the tuna and veggies together, pop them on top of the bun and grill for a few minutes.

This recipe makes one – two servings.

Ingredients

  • 1 can of tuna, drained

  • 1 slice of red onion, diced

  • 1/4 red pepper, diced

  • 1/4 yellow pepper, diced

  • 1 tablespoon extra virgin olive oil

  • 1/2 tablespoon mayonnaise

  • 1 tablespoon parsley, chopped

  • 1/2 small clove of garlic, grated

  • 1/4 teaspoon Dijon mustard

  • 1 teaspoon freshly squeezed lemon juice

  • Brioche bun (or bread if you prefer)

Directions

  • Heat the grill to 200 degrees Celsius.
  • Mix all the ingredients together in a bowl with a pinch of salt and pepper – stir well so everything is evenly combined.
  • Toast the brioche bun (or bread) lightly. Place on top of an oven tray lined with tin foil / parchment paper and top both halves of the bun with the tuna mixture.
  • Grill for around 5 minutes, keeping an eye on it so it doesn’t burn.
  • Serve with a side salad.
