These days any recipe using a can of tuna is a good recipe in my books! This is so easy and quick to make, just mix the tuna and veggies together, pop them on top of the bun and grill for a few minutes.
This recipe makes one – two servings.
1 can of tuna, drained
1 slice of red onion, diced
1/4 red pepper, diced
1/4 yellow pepper, diced
1 tablespoon extra virgin olive oil
1/2 tablespoon mayonnaise
1 tablespoon parsley, chopped
1/2 small clove of garlic, grated
1/4 teaspoon Dijon mustard
1 teaspoon freshly squeezed lemon juice
Brioche bun (or bread if you prefer)
- Heat the grill to 200 degrees Celsius.
- Mix all the ingredients together in a bowl with a pinch of salt and pepper – stir well so everything is evenly combined.
- Toast the brioche bun (or bread) lightly. Place on top of an oven tray lined with tin foil / parchment paper and top both halves of the bun with the tuna mixture.
- Grill for around 5 minutes, keeping an eye on it so it doesn’t burn.
- Serve with a side salad.
