French Toast Sandwich

This French Toast Sandwich is such a fun twist on a regular toasted sandwich – perfect for brunch or a nice mid-week lunch.

The fillings below are purely a suggestion – get creative and fill these with any of your favourite toasted sandwich fillings!

This recipe makes one sandwich – double up as needed.

Ingredients

  • 2 slices of sourdough bread

  • 1 egg

  • 2 – 3 tablespoons milk

  • 50g buffalo mozzarella

  • 2 – 3 slices grilled centre cut bacon

  • 3 – 4 slices salami

  • 1/4 teaspoon Dijon mustard (optional)

Directions

  • Beat the egg and milk together with a pinch of salt and pepper.
  • Spread the mustard (if using) on one of the pieces of sourdough. Then prepare the sandwich with the grilled bacon, salami and cheese. Make sure the bacon is cooked before adding to the sandwich! I cook mine under a 250 degree grill for 5 – 8 minutes, watching closely so it doesn’t burn.
  • Put the sandwich in a small oven dish / container and pour the egg mixture over the top and leave to absorb for a few minutes. I like to carefully pour the excess egg mixture out into a container (with one hand on top of the sandwich so it doesn’t fall apart) and pour it over the top again to make sure the sandwich absorbs as much of it as possible.
  • Heat some olive oil and butter in a frying pan over medium – high heat. Once hot, add the sandwich and cook for 4 – 5 minutes on the first side. Turn carefully and cook for another 4 – 5 minutes until golden brown. Serve immediately.
