Eggs are a fantastic breakfast for those of us who want to start the day with a nice healthy and filling meal. However, a lot of people make some very common mistakes which means they are eating dry and flavourless eggs and no one wants to start their day like that. These eggs are fluffy and delicious and only take a few minutes to make.
Ingredients
- 2 large eggs
- 1 slice of bread
- Knob of butter
Directions
- Melt a small knob of butter in a saucepan over low heat. Cooking the eggs slowly over low heat ensures that they stay fluffy and don’t dry out and become tough.
- When the butter has melted, crack in the whole eggs. Beat with a wooden spoon until the eggs are an even consistency. Continue to stir gently until the eggs are cooked. Stir continuously until the eggs are cooked to ensure they are cooked evenly.
It’s important to take them off the heat and out of the hot saucepan as soon as they are done as they can dry out and become over cooked very quickly. They should be removed from the pan when they still look slightly under done and they will be perfect. - Season off the heat with salt and pepper and serve on their own or with brown toast / soda bread.
