My Chocolate Chip Oatmeal Cookies have quickly become the most popular recipe on my website. I love seeing all of you making and enjoying them!
These cookies are a twist on the classic – they contain no dairy so are crunchier, but still are nice and chewy inside (not dry like a biscuit).
They’re super quick to make so, if you start now, you could be taking these out of the oven in 15 minutes!
I suggest making both varieties to compare and contrast! 😉
This recipe makes 5 cookies.

minutesIngredients
100g regular oats
60ml honey
40g chopped milk chocolate or chocolate chips (use a good dark chocolate for dairy free)
1 egg, beaten
1/2 teaspoon vanilla extract
Pinch of salt
Directions
- Heat the oven to 180 degrees Celsius and line a baking tray with parchment paper.
- Mix the oats, honey, egg, vanilla and salt together in a large bowl and stir through the chopped chocolate.
- Divide the mixture up into 5 balls and place them on the parchment paper. Gently press down with your finger tips to around 1cm thickness. They won’t rise or expand so you can judge what size / thickness you want them before you put them in the oven.
- Bake for 10 – 12 minutes and then cool on a wire rack.
