- 4 ripe avocados
- 2-3 large cloves of garlic, finely minced
- juice of 1 1/2 – 2 limes
- a large hand of fresh coriander leaves, finely chopped
- 1 red chili, minced (optional)
- Half the avocados and scoop out the flesh into a bowl or onto a board. Mash the avocados but don’t purée – a slightly lumpy guacamole has better texture.
- Add the lime juice, garlic, coriander and chili and stir together.
- Season with salt and pepper to taste.
