Shoestring fries

These shoe string fries are a fab alternative to regular chips or wedges and take half the time to cook so you can still have homemade chips even when you’re tight on time!

It’s important that the fries have enough space on the pan – they should be in a single layer, not crowded together or piled up. Use more than one oven dish if needed.

This recipe serves one – double up as needed.

Ingredients

  • 1 medium potato, peeled

  • olive oil – enough to cover the bottom of the oven dish

Directions

  • Heat the oven to around 250 degrees Celsius.
  • Slice a thin slice off the potato and then place this flat side down on the chopping board. Using a sharp knife, slice the rest of the potato into very thin slices and then slice these into thin strips.
  • Place the sliced potato strips into a bowl of ice cold water for 5-8 minutes. This removes the starch from the potatoes. Drain the potato strips and dry thoroughly – they must be completely dry before going into the oven!
  • While the potato strips are soaking in the water, pour enough olive oil into the oven dish to cover the bottom. When the potato strips are dry, pop the oven dish with the oil into the oven for 3-4 minutes to heat. Then very carefully add the fries and toss in the hot oil.
  • Cook in the oven for 10 – 12 minutes, watching closely as they will burn very quickly at the end!
  • Drain the oil from the pan and pour the fries into a dish with some kitchen paper to absorb any excess oil.
  • Season with salt and serve immediately.
