Ingredients

  • 100g spaghetti

  • 175g chopped tomatoes

  • 30g diced onion

  • 1 large diced clove of garlic

  • 1 small bunch of basil, sliced

  • 1 tablespoon olive oil

  • 375ml chicken stock

  • 10g parmesan, grated

Directions

  • Pace the spaghetti lying down in a frying pan and put the tomatoes, onion, garlic and basil around the spaghetti.
  • Drizzle the spaghetti with the olive oil and a sprinkle of salt and pepper. Be careful with the seasoning as the stock will already be salty.
  • Pour in the chicken stock and bring up to a boil. Reduce the heat to medium so that the stock continues to simmer gently. Cook for 8 – 10 minutes until the pasta is cooked. Stir the pasta every minute or so to stop it sticking to the pan.
  • When the pasta is done, stir in the parmesan and serve with fresh ground pepper.
