I don’t usually have breakfast during the week but I love making a nice breakfast / brunch over the weekend and taking some time out to relax and unwind.
These little sausage patties are perfect for a weekend treat. They’re so simple, only take a few minutes to make and yet they really feel like something special and fun.
Give them a go today for a traditional Irish breakfast with a twist.
This recipe will give you two sausage patties – double up as needed.
Breakfast Sausage Patties

4 pork breakfast sausages
1/2 teaspoon maple syrup
1/4 teaspoon Dijon mustard
Pinch of salt and pepper
Directions
- Remove the sausage meat from the cases and pop into a bowl. Add the maple syrup, mustard and salt and pepper and mix together with a fork for a few minutes.
- Divide the mixture into 2 and pat into little pattie shapes. The mixture will be sticky but that’s perfectly fine!
- Heat a little olive oil in a pan over medium – high heat. Add the sausage patties and cook for around 4 minutes on each side until nice and golden and cooked through. I would really recommend a meat thermometer if you don’t have one already. I don’t have many kitchen gadgets – but this is one I do have and use every day!
- Serve with eggs, any way you like them, and some buttery toast.
