• 4 ripe avocados
  • 2-3 large cloves of garlic, finely minced
  • juice of 1 1/2 – 2 limes
  • a large hand of fresh coriander leaves, finely chopped
  • 1 red chili, minced (optional)



  1. Half the avocados and scoop out the flesh into a bowl or onto a board. Mash the avocados but don’t purée – a slightly lumpy guacamole has better texture.
  2. Add the lime juice, garlic, coriander and chili and stir together.
  3. Season with salt and pepper to taste.
