minutesIngredients
100g spaghetti
175g chopped tomatoes
30g diced onion
1 large diced clove of garlic
1 small bunch of basil, sliced
1 tablespoon olive oil
375ml chicken stock
10g parmesan, grated
Directions
- Pace the spaghetti lying down in a frying pan and put the tomatoes, onion, garlic and basil around the spaghetti.
- Drizzle the spaghetti with the olive oil and a sprinkle of salt and pepper. Be careful with the seasoning as the stock will already be salty.
- Pour in the chicken stock and bring up to a boil. Reduce the heat to medium so that the stock continues to simmer gently. Cook for 8 – 10 minutes until the pasta is cooked. Stir the pasta every minute or so to stop it sticking to the pan.
- When the pasta is done, stir in the parmesan and serve with fresh ground pepper.
